Insertable is confirmed to be fixed at creation time and can't be changed afterward, including through unpublish/republish — if a custom attribute needs to become insertable and currently isn't, the practical path is creating a new custom attribute with Insertable set correctly from the start (it defaults to yes) rather than trying to convert the existing one.
