Unpublishing and then republishing the specific custom fields in question (not the whole entity configuration) has resolved this exact display gap in practice — this is distinct from the fields' own approval/publish status looking fine in the column chooser; a fresh unpublish/republish cycle can clear up a stale metadata state that a plain cache refresh doesn't touch.
