Is it possible to activate the Row Key of a standard, out-of-the-box entity in order to build a custom object against it?

Yes — open the separate "Entity" window for that entity in Developer Studio (distinct from the page you're customizing) and use its Activate Rowkey button there, rather than looking for that option on the standard entity's own configuration page.
