Is a shipment's Destination field driven by a master-data value, and can it be changed after the shipment is created?

Answer

It's a plain free-text field with no underlying master-data table behind it, and it stays editable through its own edit option right up until the shipment's linked lines have been invoiced — after that point it's locked along with the rest of the invoiced shipment data.
