In Apps8, is it possible to add a document type, like Instant Invoice or Interest Invoice, to Document Text Administration when it doesn't appear in that screen's built-in list?

Yes, achieve the equivalent maintainable free-text content via custom fields instead of Document Text Administration: add a maintainable custom field on a shared/company-level LU, such as Company, holding the actual free text you want, for example remittance details per company, then add a second, read-only custom field on the specific target document's LU, such as Instant Invoice, that looks up and displays that company-level text. For Report Designer, this second custom field is then directly available to add to the layout. For Crystal Reports, either join the target document's own custom-field view into the report, or join the Company's custom-field view directly and skip adding the second custom field on the document LU altogether.
