A Lobby Data Source pointing at an IAL shows data and columns correctly in the Data Source Designer's own preview even without explicitly selecting any columns, but the Element Designer can't actually use that Data Source unless specific columns have been written into the Data Source definition. Is there a way to pick columns from a list instead of writing them manually?

No — this is a known limitation when using IALs as a Lobby Data Source specifically. Unlike a Data Source built against a standard table/view, there's no column-picker for an IAL-based Data Source; manually typing in the specific column names needed is the only option.
