Try refreshing the Object Connection cache first — this exact gap (no Object Key LOV for a specific LU newly wired into Object Connections) has been observed to resolve itself on more current SUs once the object-key data is actually fetched into the LOV, so a cache refresh may surface a dropdown that wasn't populating before, rather than this being a permanent limitation for every entity type.
