It makes the field remember and default to whatever value was last saved into it, rather than always starting blank or with a fixed default — for example, setting Default to Previous on Part Main Group for Master Part means that after creating a part with Main Group '2', the next new part record automatically defaults its Main Group to '2' again, based on that last-saved value, until it's changed again.
