Some standard IFS fields (and custom fields) show no Field Description at all in Aurena — is there a way to add a description for a field that currently doesn't have one?

No — per IFS's own documentation on Field Descriptions, adding a brand-new description to a field that has none isn't possible. You can edit any field description that already exists, or add translations for it, through the Field Description Editor window, but you can't create a description from scratch for a field that was shipped without one.
