The Aurena 'Subscribe' button on screens like Customer or Opportunity only lists standard/system fields as subscribable — is there a way to add a custom field to that list?

No — this isn't currently possible; Aurena's Subscribe function simply doesn't support custom fields at all, regardless of whether the custom field would otherwise meet the general subscribable-field requirements (base table, valid data type, etc.). This is a confirmed platform gap that's been raised with Product Development as a feature request, but there's no workaround or configuration option to add a custom field to the Subscribe list in the meantime.
