A search/lookup dialog (like the part selector on a Shop Order) doesn't let us add extra filter fields or search columns.

Answer

The list of values shown in a lookup dialog is a configurable selector, not a fixed part of the base page — in Page Designer, find the field that opens the lookup, expand its list-of-values configuration, and follow the link to the underlying selector to add or change the searchable columns.
