Check whether the screen's underlying view has been added to the Approved Detail Views list — a screen backed by a view (for example, a union-based analysis view) needs that view explicitly included in Approved Detail Views before custom fields built against it will appear in the Column Chooser. If it's missing, add the view there, save, and reload the configuration on the screen again — the custom field should now appear as an available column.
