It depends on the field's data type: default values for a Persistent custom field are currently only supported for string and enumeration types — other data types don't have this option available. If you need default-value behavior for a type that doesn't support it directly, you'd need to populate the default some other way (like a Custom Event on insert) rather than through the custom field's own default-value setting.
