Check the event action's Additional Header Parameters — calling an OData API (a projection endpoint) from an event action specifically requires the Accept:application/json header to be set there explicitly; Postman (and similar tools) often negotiate this automatically or default sensibly, while an event action's own HTTP call doesn't, which is why the identical call can fail from the event action but succeed from Postman with no header changes needed there.
