Is it possible to add a custom field onto one of the standard modal dialogs/wizards (like an availability-control-change popup), rather than only being able to edit that data through the main record's context menu?

Answer

No — custom fields can't currently be added to dialogs or wizards, even ones that include an embedded table, regardless of the specific dialog. If a workflow genuinely needs an extra field captured at that exact popup step, the field has to be added elsewhere on the main record instead (or captured through a separate custom command/page), since the modal dialogs themselves aren't extensible with custom fields.
