Is it possible to remove a standard field's pre-filled default value using Page Designer (on IFS Cloud), so the field starts out empty when creating a new record instead of automatically populating with a default?

Yes — in Page Designer, open the Fields configuration for that attribute and remove its configured default-value definition (the section that sets an initial/update value for the field). After removing that default-value configuration, save your changes and publish the context for the change to take effect — the field will then start empty on new records instead of auto-populating.
